DIY Toaster Scrambles: A healthy version of our childhood

Ah, Toaster Scrambles. Those little pockets of joy that made getting ready for school a little better. They brought comfort and nostalgia, but not so sure they bring the healthy breakfast we are now looking for as moms. So, I had the thought, what if I can use the viral dough everyone is making for bagels/pretzels and make my own healthy version at home. Well, good news! I figured it out, and they are so delicious, plus completely customizable.

The Beauty of Toaster Scrambles
I still wanted my Toaster Scrambles to be a combination of scrambled eggs, flavorful fillings, and a crispy outer layer. I also wanted them to be portable, easy to prepare, and a fantastic way to boost your or your kids' protein intake. By making them at home, you control what goes inside.
You can enjoy traditional flavors like cheese and bacon or try something adventurous, such as ham, spinach, and feta. Studies show that homemade meals can be up to 50% healthier than their store-bought counterparts, allowing you to indulge without compromising your well-being.
Ingredients You’ll Need
For the Outer Layer:
1 cup of flour
3/4 cup plain nonfat Greek yogurt
1 tsp baking powder
Everything Bagel Seasoning
For the Filling:
3 eggs
1/2 cup egg whites
Turkey bacon
1/4 cup shredded cheese (I used nonfat sharp cheddar)
Optional Fillings:
Change up the cheese (feta, mozzarella, or dairy-free)
Diced veggies (bell peppers, spinach, onions, or tomatoes)
Cooked protein (ham, bacon, or plant-based options)

Step-by-Step Instructions
Preparing the Outer Layer
Preheat the oven to 400 degrees.
Make the Dough: In a mixing bowl, combine the flour, Greek yogurt, and baking powder. Roll the dough into a ball and add more flour if you need. Here is a video from Instagram to show how to make the dough. Cut the dough in half.
Roll Out the Dough: On a lightly floured surface, roll out each half of the dough into a rectangle shape about the size of your pan (9x13). Spray your pan and place one half of the dough on the pan to create the bottom layer.

Make the Filling
Cook the Eggs: In a bowl, whisk together the eggs and egg whites. Pour the egg mixture into a non-stick skillet over medium heat. Stir gently until the eggs are softly scrambled, which usually takes around 3-4 minutes.
I chose to make my Toaster Scrambles in layers, but you could also scramble your ingredients with the eggs. Just add whatever fillings your heart desires.
Assembling the Toaster Scrambles
Layer it up Method: You will have 4 sections to create 4 Toaster Scrambles. In each quadrant of your dough, place one slice of bacon (I cut mine in half). Add one-fourth of the cooked egg mixture. Top with shredded cheese.
Scramble Method: Place one-fourth of your scramble in each quadrant. Make sure to leave room on the top and sides to seal your Toaster Scramble.
Seal it Up: Place the second half of your dough on top, covering all four sections. Use a pizza cutter to cut the dough into 4 sections. Seal the sides of each section by pressing the edges together. Use a fork to crimp the edges for an extra seal and a decorative touch.
Top it off: Brush each Toaster Scramble with an egg wash and sprinkle with Everything Bagel Seasoning.
Cooking Method: Cook for 20 minutes at 400 degrees or until golden brown and crispy.
